Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 cup (240ml) whole milk
  • 1/2 cup (113g) unsalted butter
  • 29 oz (828g) canned sliced peaches in heavy syrup
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Place the 1/2 cup (113g) unsalted butter in a 9x9-inch baking pan. Put it in the oven for a few minutes until it is completely melted and bubbling. Carefully remove the pan.
  3. In a large mixing bowl, whisk together 1 cup (120g) flour, 1 cup (200g) sugar, 1 tbsp (12g) baking powder, and 1/4 tsp (1.5g) salt.
  4. Pour in 1 cup (240ml) whole milk. Whisk until the batter is smooth and no large lumps remain.
  5. Pour the batter directly over the melted butter. Note: Do not stir the layers; the butter needs to stay at the bottom.
  6. Spoon 29 oz (828g) canned sliced peaches and their syrup evenly over the top.
  7. Sprinkle 1 tsp (2g) ground cinnamon and 1/2 tsp (1g) ground nutmeg over the peaches. Note: Do not mix the fruit into the batter.
  8. Bake for 38–44 minutes until the top is a deep mahogany brown and the center feels set when lightly pressed.
