Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) whole milk
- 1/2 cup (113g) unsalted butter
- 29 oz (828g) canned sliced peaches in heavy syrup
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
Instructions:
- Preheat your oven to 350°F (175°C).
- Place the 1/2 cup (113g) unsalted butter in a 9x9-inch baking pan. Put it in the oven for a few minutes until it is completely melted and bubbling. Carefully remove the pan.
- In a large mixing bowl, whisk together 1 cup (120g) flour, 1 cup (200g) sugar, 1 tbsp (12g) baking powder, and 1/4 tsp (1.5g) salt.
- Pour in 1 cup (240ml) whole milk. Whisk until the batter is smooth and no large lumps remain.
- Pour the batter directly over the melted butter. Note: Do not stir the layers; the butter needs to stay at the bottom.
- Spoon 29 oz (828g) canned sliced peaches and their syrup evenly over the top.
- Sprinkle 1 tsp (2g) ground cinnamon and 1/2 tsp (1g) ground nutmeg over the peaches. Note: Do not mix the fruit into the batter.
- Bake for 38–44 minutes until the top is a deep mahogany brown and the center feels set when lightly pressed.
