Ingredients:
- 450g Large Carrots
- 15ml Olive Oil
- 28g Ranch seasoning mix
- 30g Freshly grated Parmesan
- 3g Cracked black pepper
- 1g Garlic powder
- 5g Fresh parsley
- 5ml Fresh lemon juice
Instructions:
- Preheat your oven to 200°C (400°F).
- Peel 450g of carrots and trim the ends.
- Slice the carrots on a long diagonal into 1.5cm thick pieces. Ensure they are uniform for even cooking.
- Place carrots in a bowl and drizzle with 15ml olive oil.
- Sprinkle 28g ranch seasoning, 1g garlic powder, and 3g black pepper over the carrots. Toss until they look velvety and fully coated.
- Fold in 30g of freshly grated Parmesan cheese.
- Spread the carrots in a single layer on a large baking sheet. Space them out so they don't touch.
- Bake for 20 minutes until the edges are golden and the centers are tender.
- Remove from the oven and immediately drizzle with 5ml lemon juice.
- Sprinkle with 5g fresh parsley and serve hot.
