Ingredients:

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp fine sea salt
  • 1 tbsp granulated sugar
  • 8 tbsp ice water
  • 6 cups mixed berries (blueberries, raspberries, blackberries)
  • 0.75 cup granulated sugar
  • 0.25 cup cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
  • 1 large egg
  • 1 tbsp whole milk
  • 2 tbsp coarse sparkling sugar

Instructions:

  1. Whisk flour, salt, and sugar in a large bowl.
  2. Using a pastry cutter or fingertips, work the cold butter into the flour until pea-sized lumps form.
  3. Add ice water one tablespoon at a time, stirring with a fork until the dough just holds together.
  4. Form the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  5. Place berries, sugar, cornstarch, lemon juice, cinnamon, and salt in a saucepan over medium heat.
  6. Stir gently for 5-8 minutes until the mixture bubbles and thickens into a glossy, velvety syrup.
  7. Remove from heat and let the filling cool slightly before adding to the crust.
