Ingredients:
- 2.5 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp fine sea salt
- 1 tbsp granulated sugar
- 8 tbsp ice water
- 6 cups mixed berries (blueberries, raspberries, blackberries)
- 0.75 cup granulated sugar
- 0.25 cup cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp ground cinnamon
- 0.25 tsp salt
- 1 large egg
- 1 tbsp whole milk
- 2 tbsp coarse sparkling sugar
Instructions:
- Whisk flour, salt, and sugar in a large bowl.
- Using a pastry cutter or fingertips, work the cold butter into the flour until pea-sized lumps form.
- Add ice water one tablespoon at a time, stirring with a fork until the dough just holds together.
- Form the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
- Place berries, sugar, cornstarch, lemon juice, cinnamon, and salt in a saucepan over medium heat.
- Stir gently for 5-8 minutes until the mixture bubbles and thickens into a glossy, velvety syrup.
- Remove from heat and let the filling cool slightly before adding to the crust.
