Ingredients:

  • 4 cups (600g) sliced peaches
  • 2 tbsp (30ml) lemon juice
  • 1/4 cup (50g) granulated sugar
  • 1 tsp (2g) ground cinnamon
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 6 tbsp (85g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a separate bowl, toss sliced peaches with lemon juice, cinnamon, and 1/4 cup granulated sugar. Pour the mixture into a 9x9 inch baking dish and spread evenly.
  3. In a medium bowl, whisk together all-purpose flour, 1/2 cup granulated sugar, baking powder, and salt.
  4. Stir in the whole milk until just combined; do not overmix.
  5. Pour melted butter into the bottom of the baking dish or drizzle over the fruit, then spoon the batter evenly over the peaches.
  6. Bake for 40–45 minutes until the topping is a deep golden brown and the peach juices are bubbling up the sides.
