Ingredients:

  • 1 lb Lean Ground Beef (90% lean)
  • 0.5 tsp Coarse Sea Salt
  • 0.25 tsp Cracked Black Pepper
  • 0.5 Yellow Onion, finely diced (approx. 100g)
  • 3 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • 1 tbsp Soy Sauce
  • 1 tsp Light Brown Sugar
  • 0.5 tsp Red Pepper Flakes

Instructions:

  1. Set a 12-inch heavy-bottomed skillet over medium-high heat. Wait until the surface is hot enough that a drop of water evaporates instantly.
  2. Place the ground beef in the center of the pan in one large disc. Do not break it up. Sear undisturbed for 3–4 minutes until a dark, mahogany-colored crust forms on the bottom.
  3. Flip the beef chunks and use a wooden spoon to break the meat into smaller crumbles. Push the meat to the edges of the pan.
  4. Add the diced onions to the center of the pan. Cook for 2 minutes until translucent, then add the minced garlic and red pepper flakes, stirring into the meat.
  5. Pour the soy sauce and brown sugar over the mixture. Stir constantly for 60 seconds as the liquid reduces and coats the beef in a glossy glaze. Remove from heat immediately.
