Ingredients:
- 2.5 cups all-purpose flour
- 1.5 cups granulated sugar
- 1 tbsp baking powder
- 0.5 tsp salt
- 0.75 cup unsalted butter, softened
- 3 large eggs, room temperature
- 1 cup whole milk, room temperature
- 2 tsp pure vanilla extract
- 1 cup mixed berries
- 0.25 cup granulated sugar
- 1 tbsp fresh lemon juice
- 2 tbsp water
- 3 cups heavy whipping cream, ice cold
- 0.5 cup powdered sugar
- 1 tsp pure vanilla extract
- 4 oz mascarpone cheese
- 2 cups fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries
Instructions:
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- Cream the softened butter and granulated sugar together until the mixture is pale and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Alternating between the dry ingredients (flour, baking powder, salt) and the milk, mix on low speed until just combined; do not overmix.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes until a toothpick comes out clean and the edges are golden brown. Cool completely.
- In a small saucepan, combine mixed berries, sugar, lemon juice, and water. Simmer over medium heat for 5-7 minutes, mashing the berries with a fork, until the liquid has reduced.
