Ingredients:

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup whole milk, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup mixed berries
  • 0.25 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 2 tbsp water
  • 3 cups heavy whipping cream, ice cold
  • 0.5 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 4 oz mascarpone cheese
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. Cream the softened butter and granulated sugar together until the mixture is pale and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Alternating between the dry ingredients (flour, baking powder, salt) and the milk, mix on low speed until just combined; do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes until a toothpick comes out clean and the edges are golden brown. Cool completely.
  6. In a small saucepan, combine mixed berries, sugar, lemon juice, and water. Simmer over medium heat for 5-7 minutes, mashing the berries with a fork, until the liquid has reduced.
