Ingredients:
- 2 cups (250g) All-purpose flour
- 1 tsp (5g) Baking soda
- ½ tsp (3g) Salt
- 1 tbsp (6g) Ground cinnamon
- ¼ tsp (1g) Ground nutmeg
- ¾ cup (170g) Unsweetened applesauce
- ½ cup (110ml) Neutral oil
- 1 cup (200g) Brown sugar, packed
- 1 tsp (5ml) Pure vanilla extract
- 1 tbsp (15ml) Apple cider vinegar
- 2 cups (225g) Grated zucchini
- ½ cup (75g) Chopped walnuts
- ½ cup (90g) Vegan semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the large holes of a box grater.
- Place the grated zucchini in a clean kitchen towel or fine-mesh strainer and gently press out excess water until no liquid is pooling.
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the applesauce, oil, brown sugar, vanilla, and apple cider vinegar until smooth and sugar is mostly dissolved.
- Sift in the flour, baking soda, salt, cinnamon, and nutmeg. Stir with a spatula until just combined.
- Fold in the prepared zucchini, chopped walnuts, and vegan chocolate chips.
- Transfer the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes until the edges are set and a toothpick comes out clean.
