Ingredients:

  • 2 cups (250g) All-purpose flour
  • 1 tsp (5g) Baking soda
  • ½ tsp (3g) Salt
  • 1 tbsp (6g) Ground cinnamon
  • ¼ tsp (1g) Ground nutmeg
  • ¾ cup (170g) Unsweetened applesauce
  • ½ cup (110ml) Neutral oil
  • 1 cup (200g) Brown sugar, packed
  • 1 tsp (5ml) Pure vanilla extract
  • 1 tbsp (15ml) Apple cider vinegar
  • 2 cups (225g) Grated zucchini
  • ½ cup (75g) Chopped walnuts
  • ½ cup (90g) Vegan semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the large holes of a box grater.
  2. Place the grated zucchini in a clean kitchen towel or fine-mesh strainer and gently press out excess water until no liquid is pooling.
  3. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  4. In a large bowl, whisk together the applesauce, oil, brown sugar, vanilla, and apple cider vinegar until smooth and sugar is mostly dissolved.
  5. Sift in the flour, baking soda, salt, cinnamon, and nutmeg. Stir with a spatula until just combined.
  6. Fold in the prepared zucchini, chopped walnuts, and vegan chocolate chips.
  7. Transfer the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 50–60 minutes until the edges are set and a toothpick comes out clean.
