Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (1g) ground cloves
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) vegetable oil
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (230g) grated zucchini, squeezed dry
- 1/2 cup (60g) chopped walnuts
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1g) salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or a Bundt pan.
- Grate the zucchini using the medium holes of a box grater. Place the shreds in a kitchen towel and gently squeeze out excess water until damp but not dripping.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, beat the sugar, oil, eggs, and vanilla until the mixture looks pale and fluffy.
- Fold the dry ingredients into the wet mixture until just combined.
- Gently stir in the squeezed zucchini and chopped walnuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean and the edges pull slightly away from the pan.
- Let the cake cool completely before frosting.
- Prepare the frosting by whipping together the softened cream cheese and butter until smooth, then gradually adding powdered sugar, vanilla, and salt until silky.
- Spread the frosting evenly over the cooled cake using an offset spatula.
