Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (225g) shredded zucchini, lightly squeezed
- 1/2 cup (120ml) sour cream
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and line a 15x10 inch jelly roll pan with parchment paper, leaving an overhang on the sides.
- Shred the zucchini using the fine side of a grater. Place the shreds in a clean kitchen towel and gently press out excess liquid without wringing it bone-dry.
- In a large bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- In a separate bowl, beat the granulated sugar, vegetable oil, and eggs until the mixture is pale and fluffy.
- Stir vanilla extract and sour cream into the wet ingredients, then fold in the squeezed zucchini.
- Gradually stir the dry ingredients into the wet mixture until just combined, ensuring no streaks of flour remain.
- Spread the batter evenly across the prepared sheet pan using a spatula.
- Bake for 30–35 minutes or until the center is set.
- Prepare the frosting by beating softened cream cheese and unsalted butter together, then mixing in powdered sugar, vanilla extract, and heavy cream until smooth.
- Spread the frosting evenly over the cooled cake before slicing into 16 servings.
