Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (1g) ground cloves
- 3/4 cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (230g) grated zucchini, squeezed dry
- 1/2 cup (120ml) sour cream
- 8 oz (225g) full-fat cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch (1g) salt
Instructions:
- Grate the zucchini using the fine side of the grater. Place the shreds into a clean kitchen towel and squeeze firmly over the sink to remove excess water until damp but not dripping.
- Cream together the softened butter and sugar until pale and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, nutmeg, and cloves.
- Gradually alternate adding the dry ingredients and sour cream into the butter mixture, stirring until just combined. Fold in the squeezed zucchini by hand.
- Pour the batter into a greased 9x13 inch baking pan. Bake at 350°F (175°C) until the top is mahogany-colored and a toothpick inserted into the center comes out clean with a few moist crumbs.
- Allow the cake to cool completely before frosting.
- To prepare the frosting, beat the softened cream cheese and butter together until smooth. Add powdered sugar, vanilla extract, and salt, beating until velvety and spreadable.
- Spread the frosting evenly over the cooled cake using an offset spatula.
