Ingredients:

  • 24 Oreo cookies, crushed (260g)
  • 5 tbsp (70g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened to room temperature
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (60g) sour cream
  • ½ cup (120g) pumpkin puree
  • 2 tbsp (25g) brown sugar
  • 1 tsp (2g) pumpkin pie spice
  • 1 tbsp (15ml) heavy cream

Instructions:

  1. Combine crushed cookies and melted butter in a bowl until the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a parchment-lined 9x9 inch pan using the bottom of a flat glass to ensure there are no air gaps.
  3. Bake the crust at 350°F (175°C) for 8 minutes, then remove and let cool slightly.
  4. Beat the softened cream cheese and granulated sugar on medium speed until smooth and fluffy.
  5. Add eggs one at a time, mixing on low speed just until combined to prevent the cheesecake from cracking.
  6. Stir in the vanilla extract and sour cream until the batter is a uniform, pale ivory color.
  7. In a small bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, and heavy cream until smooth.
  8. Pour the white cheesecake batter over the cooled crust and smooth the top with a spatula.
  9. Drop dollops of the pumpkin mixture onto the surface and use a toothpick or skewer to drag the puree through the batter to create spooky swirls.
  10. Bake for the remaining cook time, then remove and chill in the refrigerator for 4 hours to ensure clean slicing.
