Ingredients:
- 24 Oreo cookies, crushed (260g)
- 5 tbsp (70g) unsalted butter, melted
- 16 oz (450g) cream cheese, softened to room temperature
- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- ¼ cup (60g) sour cream
- ½ cup (120g) pumpkin puree
- 2 tbsp (25g) brown sugar
- 1 tsp (2g) pumpkin pie spice
- 1 tbsp (15ml) heavy cream
Instructions:
- Combine crushed cookies and melted butter in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a parchment-lined 9x9 inch pan using the bottom of a flat glass to ensure there are no air gaps.
- Bake the crust at 350°F (175°C) for 8 minutes, then remove and let cool slightly.
- Beat the softened cream cheese and granulated sugar on medium speed until smooth and fluffy.
- Add eggs one at a time, mixing on low speed just until combined to prevent the cheesecake from cracking.
- Stir in the vanilla extract and sour cream until the batter is a uniform, pale ivory color.
- In a small bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, and heavy cream until smooth.
- Pour the white cheesecake batter over the cooled crust and smooth the top with a spatula.
- Drop dollops of the pumpkin mixture onto the surface and use a toothpick or skewer to drag the puree through the batter to create spooky swirls.
- Bake for the remaining cook time, then remove and chill in the refrigerator for 4 hours to ensure clean slicing.
